Hummus & Tomato on Rye is a simple and satisfying breakfast, snack or light lunch made with toasted rye bread, creamy hummus and juicy cherry tomatoes. Finished with lemon juice, black pepper and a little seasoning, this quick recipe is fresh, flavourful and ready in minutes.

1 slice rye bread

2 tbsp hummus (homemade or store bought)

6 cherry tomatoes, sliced

1 tsp butter, optional

Squeeze of lemon juice

Pinch of pink Himalayan salt

Freshly ground black pepper
Directions
Toast the rye bread until crisp and golden.
Spread with butter if using, then layer with hummus.
Slice the cherry tomatoes and arrange them over the hummus.
Season with salt and black pepper, then finish with a squeeze of lemon juice.
Serve immediately while the toast is still warm.
Recipe Note
Add fresh basil, parsley or chilli flakes for extra flavour. To keep this recipe vegan, skip the butter or use a plant-based alternative.
