This Lentil Dahl is a comforting and flavourful dish made with lentils, tomatoes, garlic, ginger and aromatic spices. Slowly cooked until rich and satisfying, it's a simple vegetarian meal that's perfect for lunches, dinners and meal preparation. Finished with fresh coriander and a squeeze of lemon, this traditional-inspired dahl delivers warmth and flavour in every spoonful.

Ingredients

  • 3 tsp of butter

  • 1 onion, chopped

  • 2 green chilies, seeded and chopped

  • 1 tsp chopped fresh ginger

  • 250g yellow or red lentils

  • 650ml water

  • 4 cloves garlic, crushed

  • 1 tsp ground cumin

  • 1 tsp ground coriander

  • 2 tomatoes, diced

  • A squeeze of lemon juice

  • 1 handful fresh coriander

  • Pinch of pink Himalayan salt

Directions

  1. Melt the butter in a pan, add onion, chilies and ginger and cook for 10 minutes until golden.
  2. Stir in the lentils and water, bring to boil, reduce heat and part cover.
  3. Simmer stirring occasionally for 50-60 minutes until it has a very thick soup consistency.
  4. Stir in the crushed garlic, cumin and ground coriander.
  5. Season with salt and pepper and cook for a further 10-15 minutes uncovered, stirring frequently.
  6. Stir in the tomatoes, adjusting the seasoning and adding lemon juice to taste.
  7. When ready garnish with fresh coriander leaves and serve with a side of cauliflower rice (or mashed cauliflower), and steamed vegetables.
