Strawberry Fields Salad is a refreshing summer salad combining sweet strawberries, blueberries and crisp cucumber with fresh spinach leaves. Finished with a light citrus dressing and fresh mint, this colourful salad offers a delicious balance of sweet and savoury flavours, making it ideal for healthy lunches, picnics and light summer meals.
Ingredients
For the Salad

¼ cucumber, diced

1 handful spinach or mixed leaves

6 strawberries, hulled and quartered

2 tbsp blueberries
For the Dressing

Juice of ½ lemon or lime

1 tbsp olive oil

1 tsp balsamic vinegar
Optional Extras

3 fresh mint leaves, torn

100g cooked chicken breast, sliced
Directions
In a small bowl or jar, whisk together the lemon or lime juice, olive oil and balsamic vinegar.
Add the spinach, cucumber, strawberries and blueberries to a serving bowl.
Drizzle over the dressing and gently toss to coat.
Scatter over the torn mint leaves and add sliced chicken if desired.
Serve immediately.
Recipe Note
Try adding crumbled feta cheese, toasted seeds or chopped walnuts for additional texture and flavour.
