Nori Lunch Wraps are a fresh, protein-rich lunch made with smoked salmon, crunchy vegetables and Japanese nori sheets. Finished with horseradish and served with tamari or soy dipping sauce, these simple wraps deliver sushi-inspired flavours in a quick and satisfying meal that is ideal for lunch, meal prep or light dinners.
Ingredients

2 pieces of smoked salmon or 1 piece of cooked fillet (cold – leftovers are good)

2 -4 sheets of Japanese Nori (seaweed paper/sushi paper)

2 tsp horseradish

1 small carrot grated

¼ cucumber thinly sliced
For Dipping

Tamari or Soy sauce

Sesame oil
Directions
Spread a thin layer of horseradish over each nori sheet, leaving a small border around the edges.
Arrange the smoked salmon, grated carrot and cucumber along one edge of the nori sheet.
Roll tightly, lightly wetting the edge of the nori with water to seal the wrap.
Slice each roll into bite-sized pieces or serve whole.
Serve with tamari or soy sauce and a few drops of sesame oil for dipping.
Recipe Note
Add sliced avocado or cooked prawns for extra flavour and a more substantial lunch.
