Sweet Potato Mash is a simple yet flavourful side dish made by boiling diced sweet potatoes until tender, then mashing them with butter for a rich and creamy texture. Seasoned with a pinch of pink Himalayan salt, this mash is perfect as a healthy side to a variety of main dishes. You can adjust the creaminess by adding a splash of water or milk while mashing. Ready in just 20 minutes, it’s a nutritious and tasty alternative to traditional mashed potatoes.

1 large sweet potato, peeled and diced

Pinch pink Himalayan salt

1 tsp butter
Directions
In a saucepan cover the sweet potato with water, sprinkle salt, cover with a lid and bring to the boil. Cook for 15-20 minutes until soft.
Drain, leaving the potatoes in the pan, place back on the lowest heat add butter and then using a potato masher, mash the potatoes adding a little water or milk as needed.
Recipe Note
Add a touch of ground cinnamon or ginger for extra flavour.
The recipe can easily be made vegan by using coconut oil instead of butter.
