Green Goodness Soup is a nourishing vegetable soup made with spinach, courgettes, cabbage and fresh coriander. Lightly simmered with garlic, onion and vegetable stock, this vibrant green soup delivers fresh flavours and wholesome ingredients in every bowl, making it perfect for a healthy lunch or light evening meal.
Ingredients

1 medium onion, chopped

1 tbsp coconut oil

2 garlic cloves, crushed

3 large handfuls spinach

2 courgettes, diced
-
½ green cabbage, shredded

1 large handful fresh coriander

450ml vegetable stock

Pink Himalayan salt, to taste

Freshly ground black pepper
Directions
Heat the coconut oil in a large saucepan over a medium heat. Add the onion and garlic and cook for 3–4 minutes until softened.
Add the courgettes and cabbage and cook for a further 5 minutes, stirring occasionally.
Pour in the vegetable stock and bring to a gentle simmer. Add the spinach and coriander.
Cook for 15–20 minutes until all the vegetables are tender.
Season with salt and black pepper to taste.
Blend until smooth using a hand blender or food processor and serve warm.
Recipe Note
Add a spoonful of Greek yoghurt or a sprinkle of seeds before serving for extra texture and protein.
