Smoked Salmon & Avocado Salad is a fresh and satisfying lunch combining smoked salmon, creamy avocado, spinach and cucumber with a simple lemon dressing. Rich in protein and omega-3 fats, this light salad makes an ideal healthy lunch or quick evening meal.
Ingredients

75g smoked salmon, torn into pieces

½ avocado, diced

2 handfuls baby spinach

½ cucumber, diced

Juice of ½ lemon

1 tsp olive oil

Freshly ground black pepper

Small pinch of salt (optional)
Optional Extras

1 tbsp capers

Handful of olives

Radish slices

Spring onion
Directions
Add the spinach, cucumber and avocado to a serving bowl.
Scatter over the smoked salmon pieces.
Whisk together the lemon juice and olive oil and drizzle over the salad.
Season with black pepper and add capers or olives if desired.
Serve immediately.
Recipe Note
Because smoked salmon already contains salt, taste the salad before adding additional seasoning.
