Chunky Monkey is a simple, healthy snack made from a blend of walnuts, desiccated coconut, sunflower or pumpkin seeds, and dates, mixed with dark cocoa powder and vanilla extract. These energy balls are naturally sweetened and packed with nutrients, offering a perfect balance of healthy fats, fibre, and antioxidants.

250g Walnuts

250g Desiccated coconut

250g Sunflower or pumpkin seeds

12 dates

250g Dark cocoa powder

1 tsp Vanilla extract

1 tbsp water
Directions
- In a small cup combine water and vanilla extract set aside.
- In a food processor combine walnuts, coconut, seeds and dates. Then add cocoa powder, and vanilla water. Process again until you create a moist (but not soggy mix).
- Using your hands, roll approximately 1-1/2 tsp of mix into mini chunky monkey balls. Place on a tray of baking paper and set in the fridge for a minimum of 30 minutes, but they are best after being in the fridge overnight.
- These will last in the fridge for 5-7 days.
Recipe Note
Lightly wet your hands before rolling the mixture to prevent it sticking and create smoother energy balls.
Store in an airtight container in the fridge for up to one week.
