Fruit & Nut Quinoa is a fresh and nourishing breakfast bowl combining protein-rich quinoa with colourful fruit and crunchy roasted almonds. Sweet berries, banana and kiwi provide natural sweetness, while lemon juice and a drizzle of honey or agave add brightness. This satisfying breakfast offers a balance of protein, fibre and healthy fats to help keep you feeling fuller for longer.
Ingredients

¼ cup dry quinoa

½ cup water
-
1 handful mixed berries

½ banana, sliced
-
1 kiwi, sliced

15–20g home roasted almonds

1 tsp lemon juice
-
1 tsp honey or agave nectar
Optional Toppings

Desiccated coconut

Greek yoghurt
Directions
Rinse the quinoa thoroughly under cold water.
Add the quinoa and water to a saucepan and bring to the boil.
Reduce the heat, cover and simmer for 12–15 minutes until the liquid has absorbed.
Allow the quinoa to cool slightly.
Arrange the berries, banana and kiwi over the quinoa.
Scatter the roasted almonds on top.
Drizzle with lemon juice and honey or agave.
Serve immediately or chill for 10 minutes before serving.
Recipe Note
