These Black Bean Patties are a delicious, plant-based option made with mashed black beans, cooked quinoa, and a mix of herbs and spices. Seasoned with oregano, basil, garlic, and a dash of Tabasco for a kick, they offer a wholesome and satisfying meal. 1 tbsp coconut oil

1 can black beans, rinsed and drained

1 egg

1/2 onion, chopped

250g cooked quinoa

1 tsp dried oregano

1 tsp dried basil

1/2 tsp minced garlic

Pink Himalayan salt

Black pepper

Tabasco sauce to taste
Directions
- Put the beans in a large bowl and mash well with a fork. Add egg, onion, oregano, basil, garlic, salt, pepper and Tabasco. Mix well to combine then shape into 6 patties.
- Heat oil in a frying pan over a medium heat, and fry the patties until brown on the outside and piping hot in the middle (approx. 5 minutes each side).
Serve with Sweet Potato Fries, Sexy Salsa and a large Greek Salad.
