Lentil Dahl is a warming and nutritious dish made with yellow or red lentils, cooked slowly with onion, chilies, ginger, and fragrant spices. Finished with a squeeze of lemon juice and garnished with fresh coriander, this dahl is perfect served with cauliflower rice or steamed vegetables. Packed with flavour and easy to make, it’s a wholesome meal ideal for lunch or dinner.
Ingredients

3 tsp of butter

1 onion, chopped

2 green chilies, seeded and chopped

1 tsp chopped fresh ginger

250g yellow or red lentils

650ml water

4 cloves garlic, crushed

1 tsp ground cumin
-
1 tsp ground coriander
-
2 tomatoes, diced
-
A squeeze of lemon juice

1 handful fresh coriander
-
Pinch of pink Himalayan salt
Directions
- Melt the butter in a pan, add onion, chilies and ginger and cook for 10 minutes until golden.
- Stir in the lentils and water, bring to boil, reduce heat and part cover.
- Simmer stirring occasionally for 50-60 minutes until it has a very thick soup consistency.
- Stir in the crushed garlic, cumin and ground coriander.
- Season with salt and pepper and cook for a further 10-15 minutes uncovered, stirring frequently.
- Stir in the tomatoes, adjusting the seasoning and adding lemon juice to taste.
- When ready garnish with fresh coriander leaves and serve with a side of cauliflower rice (or mashed cauliflower), and steamed vegetables.
