Lentil, Quinoa & Mint Salad is a fresh and satisfying salad combining quinoa, green lentils, avocado, cucumber, feta cheese and mint. Finished with a simple lemon and olive oil dressing, this protein-rich salad is ideal for lunch, meal prep or as a nutritious side dish.
Ingredients

75g cooked quinoa

75g cooked puy (green) lentils

75g Edamame beans (optional)

½ avocado (diced)

50g diced feta cheese

4-5 fresh mint leaves (finely torn)

¼ cucumber, diced
Dressing

2 tbsp olive oil
- 1 tbs lemon juice
- Pink Himalayan salt and black pepper
Directions
In a small bowl or jar, whisk together the olive oil, lemon juice, salt and pepper until combined.
Place the quinoa, lentils, avocado, cucumber, feta cheese and mint into a large bowl.
Pour over the dressing and gently toss until evenly coated.
Serve immediately or chill for 15 minutes before serving for a fresher flavour.
Recipe Note
Add toasted pumpkin seeds, pomegranate seeds or extra herbs for additional texture and flavour.
