Kurly Kale Salad is a delicious and healthy dish featuring finely chopped kale, softened with a zesty dressing made of olive oil, apple cider vinegar, lemon juice, and a touch of agave nectar. The kale is massaged to make it tender, then mixed with diced avocado, red pepper, and pine nuts for a rich combination of textures. Optional feta or goats cheese adds a creamy element. This fresh and flavourful salad is perfect for a light lunch or side dish, packed with nutrients and bright flavours.
Ingredients
- 4 cups kale leaves (thick stalks removes) and finely chopped (or shredded)
- 1 avocado, diced

1/2 red pepper, diced
- Small handful of chopped pine nuts
- 50g feta or goats cheese (optional)
For the dressing
- 1/4 cup olive oil
- 1/4 cup apple cider vinegar
- Juice of 1 lemon
- Zest of 1 lemon

1 tbsp agave nectar or honey
Directions
- To make the dressing whisk together all ingredients and set aside.
- Add chopped Kale to a salad bowl and pour over the dressing, using clean hands massage the dressing into the kale so that the leaves naturally soften and wilt for ease of chewing.
- Once softened and the dressing is mixed evenly across the leaves, add the remaining salad ingredients and toss again.
- Serve immediately.
Recipe Note
Massage the kale with a little olive oil for 1–2 minutes before adding the dressing. This helps soften the leaves and improves the texture of the salad.
