Ingredients

1 slice of rye bread or sourdough

2 eggs scrambled

2 vines of tomatoes

½ avocado sliced

1 handful of mushrooms

2 handfuls of spinach

1 tsp butter

¼ tsp crushed garlic

Olive oil

Pink Himalayan salt

Oregano (dried)
Directions
- Grill the vine tomatoes for 5-10 minutes until they start to split.
- Heat the butter in a pan and add the garlic for a minute, then add the spinach and the mushrooms and stir fry for a few minutes.
Toast the bread and spread with butter.
Arrange all ingredients on your plate, drizzle with olive oil, and season with salt & pepper and a dusting of oregano!
