Mediterranean Chicken is a flavourful dish featuring a butterflied chicken breast stuffed with creamy buffalo mozzarella, fresh spinach, and ripe tomato. The chicken is wrapped in tin foil and topped with a rich pesto sauce, locking in moisture and infusing the chicken with Mediterranean flavours. Baked until tender and juicy, this dish is easy to prepare and perfect for a wholesome dinner. Serve with a side of vegetables or salad for a delicious, healthy meal.
Ingredients

60g baby spinach

1 chicken breast sliced in half lengthways to make a butterfly

75g buffalo mozzarella

1 medium tomato, sliced

1 tbsp green or red pesto
Directions
Preheat the oven to 220°C. Open the butterflied chicken breast and place it onto a sheet of foil large enough to wrap completely.
Layer the mozzarella, spinach and tomato onto one side of the chicken breast. Fold the other half over to enclose the filling.
Spread the pesto over the top of the chicken and wrap the foil securely around it. Wrap the tin foil around, pinching the edges to encase the breasts for even baking.
Bake for 20 minutes or until the chicken is cooked through. Leave to rest for 5 minutes before unwrapping and serving.
Recipe Note
Secure the chicken with cocktail sticks before wrapping if the filling is particularly generous. Remember to remove them before serving.
