Beetroot & Goats Cheese Salad is a vibrant and satisfying salad combining sweet beetroot, crisp red cabbage, juicy apple, crunchy walnuts and creamy goats cheese. Finished with a light lemon and yoghurt dressing, this colourful salad offers a delicious balance of sweet, savoury and fresh flavours, making it perfect for lunch or a light evening meal.
Ingredients

125g grated red cabbage

200g cup diced cooked beetroot

1 diced apple

1 handful of walnut pieces

50g soft goats cheese
Optional Protein

1 sliced chicken breast
Dressing

1 tbsp lemon juice

1 tbsp plain yoghurt

1 tsp agave nectar or honey

¼ tsp Dijon mustard

2 tbsp Olive Oil

Pinch of pink Himalayan Salt

Dash of crushed garlic (optional)
Directions
Place the red cabbage, beetroot, apple, walnuts and goats cheese into a large bowl.
In a separate bowl, whisk together the lemon juice, yoghurt, olive oil, Dijon mustard, honey, salt and optional garlic.
Pour the dressing over the salad and gently toss until evenly coated.
Top with sliced chicken breast if using and serve immediately.
Recipe Note
Lightly toast the walnuts before adding them to the salad for extra crunch and flavour.
