Ingredients

½ Cucumber, diced

6-8 cherry tomatoes, halved

½ Red Onion, sliced

100g Feta Cheese in chunks

100g olives, sliced or whole

Top with chicken, salmon or eggs

Pink Himalayan salt

Black pepper

1 tsp dried or fresh oregano

2 tsp olive oil

Juice of ½ lemon

1 tsp agave nectar or honey

Directions
- In a bowl make the dressing by combining all ingredients and whisking together with a fork.
- For the salad, combine all ingredients in a single serving size bowl and cover with dressing.
Recipe Note
Red onion is sweet and mild enough serve raw. To further take the edge off, a quick soak in ice water and a splash of red wine vinegar does the trick.
