Raspberry Yoghurt Whip is a quick and refreshing topping made by gently folding soft raspberries into creamy natural yoghurt. Light, fruity and naturally sweet, it makes a delicious addition to pancakes, porridge, granola or as a simple healthy snack.
Ingredients

2 tbsp plain yoghurt

1 tbsp fresh or defrosted raspberries

½ tsp honey (optional)
Directions
Place the yoghurt into a small bowl.
Add the raspberries and gently mash some of the fruit with a fork.
Whisk or fold the mixture together until the yoghurt turns a soft raspberry pink while leaving some raspberry pieces intact.
Stir in a little honey if desired.
Serve immediately or chill briefly before using as a topping for porridge, pancakes or granola.

Recipe Note
Defrosted raspberries create the strongest colour and flavour.
