Stuffed Portabellas are a tasty and satisfying dish featuring large portabella mushrooms filled with a pesto-olive oil mixture and topped with a blend of crumbly feta cheese and diced tomatoes. 2 tsp green pesto sauce

2 tsp olive oil

2 large portabella mushrooms, stemmed

100g crumbly feta cheese

Handful of cherry tomatoes - halved
Directions
Stir together pesto and olive oil then spoon 2 tablespoons pesto mixture into each mushroom cap and spread evenly
Gently mix feta cheese with tomatoes, and divide evenly to top each mushroom.
- Grill mushrooms for around 10 minutes, or until soft when pierced with knife. Serve hot and enjoy.
