This Chunky Greek Salad is a simple and delicious dish that combines cucumber, cherry tomatoes, and creamy feta cheese with olives for a burst of Mediterranean flavour. Tossed in a light dressing, it’s a perfect balance of tangy and savoury. For added protein, top with chicken, salmon, or eggs. Ready in just five minutes, this salad is a quick and healthy option for lunch or a side dish.
Ingredients

½ Cucumber, diced

6-8 cherry tomatoes, halved

½ Red Onion, sliced

100g Feta Cheese in chunks

100g olives, sliced or whole
Optional - As a light meal

Top with chicken, salmon or eggs
Dressing

Pink Himalayan salt

Black pepper
-
1 tsp dried or fresh oregano

2 tsp olive oil

Juice of ½ lemon

1 tsp agave nectar or honey
Directions
Make the dressing by whisking together the olive oil, lemon juice, oregano, honey, salt and black pepper until combined.
Place the cucumber, cherry tomatoes, red onion, olives and feta cheese into a large bowl.
Pour over the dressing and gently toss until evenly coated.
Serve immediately, or chill for 15 minutes before serving for a more developed flavour.
Top with grilled chicken, salmon or boiled eggs for a more substantial meal.
Recipe Note
Red onion is sweet and mild enough serve raw. To further take the edge off, a quick soak in ice water and a splash of red wine vinegar does the trick.
For the best flavour, use good-quality feta cheese and allow the salad to stand for 10 minutes before serving.
