These Black Bean Patties are a delicious, plant-based option made with mashed black beans, cooked quinoa, and a mix of herbs and spices. The patties are lightly fried in coconut oil until golden and crispy on the outside, with a soft and flavourful inside. Seasoned with oregano, basil, garlic, and a dash of Tabasco for a kick, they offer a wholesome and satisfying meal. Serve them alongside sweet potato fries, salsa, and a mixed salad for a balanced and flavourful dish that’s quick and easy to prepare.

Ingredients

  • 1 tbsp coconut oil

  • 1 can black beans, rinsed and drained

  • 1 egg

  • 1/2 onion, chopped

  • 250g cooked quinoa

  • 1 tsp dried oregano

  • 1 tsp dried basil

  • 1/2 tsp minced garlic

  • Pink Himalayan salt

  • Black pepper

  • Tabasco sauce to taste

Directions

  1. Put the beans in a large bowl and mash well with a fork. Add egg, onion, oregano, basil, garlic, salt, pepper and Tabasco. Mix well to combine then shape into 6 patties.
  2. Heat oil in a frying pan over a medium heat, and fry the patties until brown on the outside and piping hot in the middle (approx. 5 minutes each side).
