Ingredients

½ medium watermelon (about 800g), cut into bite-sized cubes

200g feta cheese, crumbled or cubed

Small handful fresh mint leaves, roughly torn

½ small red onion, finely sliced

1 tbsp extra virgin olive oil

Juice of ½ lime (or lemon)

Freshly ground black pepper
Directions
Place the watermelon cubes in a large serving bowl.
Add the feta cheese, mint leaves and red onion.
Drizzle over the olive oil and lime juice.
Gently toss everything together, taking care not to break up the feta too much.
Finish with a twist of black pepper and serve immediately.
