These honey roasted parsnips and carrots are a simple yet flavourful side dish, perfect for Sunday roasts, festive meals and everyday family dinners. Coated in olive oil, honey and seasoning before roasting until golden and tender, the vegetables develop a delicious natural sweetness and caramelised finish. Easy to prepare and packed with flavour, this classic roasted vegetable recipe pairs beautifully with a wide range of main meals.

Ingredients

  • 1 -2 each of parsnips & carrots peeled, halved and sliced into ½ inch thick pieces

  • 2 tsp olive oil

  • 1 tsp honey or agave nectar

  • Pink Himalayan salt

  • Black pepper

Directions

  1. Preheat the oven to 200°C. Lay parsnips & carrots on a roasting dish, pour over the oil and drizzle over honey/agave and a sprinkling of salt and pepper. Using your hands ensure they are covered in oil and seasonings.

  2. Roast in the middle of the oven for 30-40 minutes, checking and turning after 20 minutes to make sure they roast evenly.
