This Lentil, Quinoa & Mint Salad is a nutritious and flavourful dish combining cooked quinoa, puy lentils, and edamame beans with creamy avocado, fresh cucumber, and tangy feta cheese. Freshly torn mint leaves add a refreshing twist, while the simple lemon and olive oil dressing ties all the flavours together. Ingredients

75g cooked quinoa

75g cooked puy (green) lentils

75g Edamame beans (optional)

½ avocado (diced)

50g diced feta cheese

4-5 fresh mint leaves (finely torn)

¼ cucumber, diced

2 tbsp olive oil
- 1 tbs lemon juice
- Pink Himalayan salt and black pepper
Dressing
Directions
Add the dressing ingredients to a mason jar and shake vigorously, or whisk together in a small bowl.
Combine all salad ingredients into a bowl and mix thoroughly, drizzle over dressing as you desire.
