Super Foods Salad is a colourful and nutrient-rich salad combining baby spinach, curly kale, fresh herbs, avocado, cucumber, cherry tomatoes and a natural seed mix. Customisable with quinoa, chicken, feta or artichoke hearts, this versatile salad is ideal for lunch, meal prep or a light evening meal packed with fresh flavours and satisfying textures.
Ingredients

1 handful baby spinach

1 handful of curly kale – very finely chopped

1 handful fresh coriander or mint – very finely chopped (other herbs which work well are parsley and basil)

4 cherry tomatoes, sliced

¼ cucumber diced

½ avocado, diced

2 tbsp natural seed mix
-
4 pieces of jarred artichoke hearts (optional)
Optional Proteins

½ -1 cooked chicken breast or 1-2 cooked chicken thighs

1 tbsp feta cheese chunks
Optional Carbohydrate

100g cooked quinoa, brown rice or buckwheat
Directions
Place the spinach, kale, herbs, cherry tomatoes, cucumber, avocado and seed mix into a large bowl.
Add any optional ingredients such as artichoke hearts, feta cheese, cooked chicken or quinoa.
Drizzle with olive oil and a squeeze of fresh lemon juice.
Season with salt and black pepper to taste, then gently toss until combined.
Serve immediately or chill for 15 minutes before serving.
Recipe Note
Massage the kale with a small amount of olive oil before mixing to soften the leaves and improve texture.
