Hot & Sour Soup is a quick and flavourful dish made with a fragrant broth of lemongrass, galangal, kaffir lime leaves, and chili. The soup is packed with fresh tomatoes, onions, mushrooms, and your choice of prawns, chicken, or tofu, creating a delicious balance of hot and sour flavours. A touch of lime juice, honey or agave nectar, and a garnish of coriander and spring onion add brightness and depth. This soup is perfect for a light lunch or dinner, offering a satisfying mix of fresh, zesty, and comforting ingredients.
Ingredients
500-600ml of water
1 stalk of lemongrass (smashed to remove outer layer) cut in half
1 thin slice of galangal or ½ tsp of galangal paste
2 kaffir lime leaves torn into quarters
2-3 small chilies – smashed (keep whole)
1 tomato cut into quarters
1 small onion or shallot cut into pieces
2 mushrooms – cut into bite sizes
Chopped coriander and spring onion for garnish
6 prawns or 1 pre cooked chicken breast or ½ cup tofu (diced)
1 tsp honey or agave nectar
1 vegetable stock cube
1 tbsp fresh lime juice
Directions
- Heat the water in a pot over high heat until just boiling. Then add vegetable stock cube lemongrass, galangal, kaffir leaf and chilies. Cook for 2-3 minutes.
- Add tomato, onion, mushroom, cook for about 30 seconds then turn down the heat
- Add stock cube and lime juice, and then add the prawns/tofu/chicken, let the soup simmer away until the prawns/chicken are cooked or tofu is hot all the way through.
- Add fresh coriander and spring onion; combine well before serving.
