Spiced Quinoa Patties are flavourful and healthy, combining cooked quinoa with cannellini beans, fresh spinach, and parsley, seasoned with cumin, fennel, and garlic. The patties are pan-fried until golden, and slightly crispy on the outside while staying tender inside. Perfect served with hummus and salsa, these patties are a great vegetarian option for lunch or dinner, offering a delightful balance of protein, fibre, and vibrant flavours. Easy to make and versatile, they can be enjoyed on their own or as part of a larger meal.
Ingredients

1 tsp of coconut oil or butter

1/2 a red onion, finely chopped

1 crushed clove of garlic

1/2 tsp fennel or fenugreek seeds, crushed

2 tsp ground cumin

1 tin of cannellini beans, drained and rinsed

250g of cooked quinoa

1 egg to combine

Handful of parsley, chopped

Handful of spinach, finely chopped

Himalayan pink salt

Directions
Heat the coconut oil or butter in a frying pan over a medium heat. Add the onion and cook for 3–4 minutes until softened. Stir in the garlic, fennel and cumin and cook for a further minute.
Add the cannellini beans and stir to coat in the spices. Remove from the heat and allow to cool slightly.
Transfer the mixture to a large bowl. Add the quinoa, egg, parsley, spinach, salt and pepper. Mash lightly and mix thoroughly until combined.
Divide the mixture into 8 portions and shape into patties approximately 2–3cm thick.
Heat a little additional oil in a frying pan and cook the patties for 3–4 minutes on each side until golden brown and heated through.
Serve with sides of Homemade Hummus, Sexy Salsa and a crisp green salad
Recipe Note
Chill the mixture for 20 minutes before shaping if it feels too soft. This helps the patties hold together during cooking.
