Grilled Vine Tomatoes & Feta Toast combines sweet roasted tomatoes with creamy feta on toasted rye or sourdough. Finished with olive oil and black pepper, this simple Mediterranean-inspired dish is ideal for breakfast, brunch or a light lunch.
Ingredients

1 slice rye bread or sourdough, halved

2 vine tomatoes, halved

40g feta cheese, sliced or crumbled

1 tsp olive oil
-
Small pinch of pink Himalayan salt

Freshly ground black pepper
Optional

Fresh basil leaves

Oregano

Chilli flakes
Directions
Preheat the grill to a medium-high setting and line a small baking tray with foil or baking paper.
Place the tomatoes on the tray, cut side up, leaving the vine attached if preferred.
- Grill for 5-7 minutes until the tomato flesh starts to crack and juice runs out. Try not to char grill them!
Grill for 5–7 minutes until softened and beginning to blister.
Meanwhile, toast the bread until golden.
Top each piece of toast with the feta cheese and place a grilled tomato half on each.
Drizzle with olive oil and season with black pepper and a small pinch of salt before serving.
Recipe Note
Because feta is naturally salty, taste before adding additional salt.
