Feta, Avocado and Pine Nut Wrap is a fresh and satisfying lunch made with crisp lettuce leaves filled with creamy avocado, feta cheese, crunchy pine nuts and fresh vegetables. Finished with hummus for added flavour, this simple no-cook recipe offers a light yet nourishing option for lunch, meal prep or a healthy snack.
Ingredients

2 large lettuce leaves strong enough to make a ‘wrap’

8-10 small cubes of feta cheese

½ avocado

½ carrot or julienne

1 ½ tbsp pine nuts

1 tbsp Hummus

Sliced radish & cucumber
Directions
Spread the hummus evenly across the centre of each lettuce leaf.
Top with avocado, feta cheese, grated carrot, radish, cucumber and pine nuts.
Fold the sides of the lettuce leaf over the filling and roll tightly to form a wrap.
Serve immediately or chill for 10 minutes before serving.
Recipe Note
Lightly toast the pine nuts before assembling the wraps to enhance their flavour and add extra crunch.
