A wholesome and satisfying plate featuring creamy scrambled eggs, grilled vine tomatoes, garlic mushrooms, wilted spinach, avocado and toasted rye bread. Rich in protein, healthy fats and vegetables, this nourishing breakfast is substantial enough to enjoy at any time of day.
Ingredients

1 slice rye bread or sourdough

3 eggs

2 vine tomatoes
-
½ avocado, sliced
-
1 handful mushrooms, sliced

2 handfuls spinach
-
1 tsp butter
-
¼ tsp crushed garlic
-
1 tsp olive oil
-
Pinch Pink Himalayan salt

Black pepper to taste
Optional

Pinch dried oregano

Fresh herbs to serve
Directions
Place the vine tomatoes under a grill or in an air fryer for 5–8 minutes until softened and beginning to split.
Heat the butter in a frying pan. Add the garlic and mushrooms and cook for 2–3 minutes before stirring in the spinach until wilted.
Whisk the 3 eggs and scramble gently in a separate pan until cooked to your preferred consistency.
Toast the rye bread or sourdough.
Arrange the toast, scrambled eggs, tomatoes, mushrooms, spinach and avocado on a plate.
Drizzle with olive oil and season with salt, black pepper and oregano if using.
Recipe Note
For extra protein, add a fourth egg or serve alongside smoked salmon. The tomatoes can also be cooked in an air fryer for 5–6 minutes for an even sweeter flavour. A sprinkle of chilli flakes or fresh herbs works particularly well as a finishing touch.
