Hummus and Avocado Toast is a simple, nourishing breakfast or light lunch that combines creamy hummus with ripe avocado on toasted rye bread. Finished with mixed seeds, fresh parsley and a squeeze of lemon, this quick vegan meal delivers healthy fats, fibre and satisfying flavour in every bite.
Ingredients

1 slice of rye bread

½ ripe avocado

2 tbsp hummus (homemade or shop bought)

2 tsp mixed seeds (pumpkin, sunflower and sesame)

Juice of ½ lemon

Fresh parsley, chopped

Pinch of pink Himalayan salt

Freshly ground black pepper
Directions
Toast the rye bread until crisp and golden.
Spread the hummus evenly over the warm toast.
Slice or mash the avocado and arrange over the hummus.
Sprinkle over the mixed seeds and chopped parsley.
Season with salt and black pepper and finish with a squeeze of fresh lemon juice.
Serve immediately as a healthy breakfast, snack or light lunch.
Recipe Note
Add chilli flakes for extra warmth.
Top with microgreens or rocket for additional freshness.
Use sourdough instead of rye if preferred.
