Green Goodness Soup is a wholesome and vibrant dish filled with nutrient-rich vegetables like spinach, courgettes, and cabbage. Sautéed in coconut oil with garlic and onion, the vegetables are simmered in a light vegetable stock, which allows the natural flavours to shine. Fresh coriander adds a fragrant finish to the soup, and it’s seasoned simply with pink Himalayan salt and black pepper. Once blended to a smooth consistency, this soup is perfect for a warming, nourishing meal, offering a rich source of vitamins and minerals in every bowl.

1 medium onion

1 tbsp coconut oil

2 garlic cloves (crushed or thinly sliced)

3 large handfuls spinach

2 courgettes (sliced or diced)

½ green cabbage (sliced and diced)

1 large handful of coriander

450ml vegetable stock

Pink Himalayan salt

Black pepper
Directions
- Melt the oil over a low-medium heat and then add garlic and onion. Once fragrant add and courgette and cabbage.
- Once soft, add the stock, stir through and then add the spinach and coriander.
When all vegetables are soft but not falling apart (20 minutes approx.) reduce heat and allow to cool. Add a pinch of salt and season with black pepper.
- Once cool enough transfer into a blender or keep in the pan and using a hand-blender whizz into a smooth soup.
