Ingredients

1 -2 parsnips peeled, halved and sliced into ½ inch thick pieces

2 tsp olive oil

1 tsp honey or agave nectar

Pink Himalayan salt

Directions
- Preheat the oven to 200°C. Lay parsnips on a roasting dish, pour over the oil and drizzle over honey/agave and a sprinkling of salt and pepper. Using your hands ensure parsnips are covered in oil and seasonings.
- Roast in the middle of the oven for 30-40 minutes, checking and turning after 20 minutes to make sure they roast evenly.
