Ingredients

1 handful baby spinach

1 handful of curly kale – very finely chopped

1 handful fresh coriander or mint – very finely chopped (other herbs which work well are parsley and basil)

4 cherry tomatoes, sliced

¼ cucumber diced

½ avocado, diced

2 tbsp natural seed mix

4 pieces of jarred artichoke hearts (optional)

½ -1 cooked chicken breast or 1-2 cooked chicken thighs

1 tbsp feta cheese chunks

100g cooked quinoa, brown rice or buckwheat

Directions
Add all ingredients to a large bowl and mix, season to taste if desired with salt & pepper, a squeeze of lemon and olive oil.
