A simple yet flavourful dish where parsnips & carrots are coated in olive oil, honey, and seasoned with pink Himalayan salt and black pepper. Roasted until tender and golden, the natural sweetness is enhanced, making them a perfect side dish for any meal. The caramelisation brings out their earthy flavour while adding a delightful crunch on the outside. Ingredients

1 -2 each of parsnips & carrots peeled, halved and sliced into ½ inch thick pieces

2 tsp olive oil

1 tsp honey or agave nectar

Pink Himalayan salt

Directions
Preheat the oven to 200°C. Lay parsnips & carrots on a roasting dish, pour over the oil and drizzle over honey/agave and a sprinkling of salt and pepper. Using your hands ensure they are covered in oil and seasonings.
- Roast in the middle of the oven for 30-40 minutes, checking and turning after 20 minutes to make sure they roast evenly.
