Rosemary & Mustard Lamb is a simple yet flavour-packed dish featuring tender lamb steaks marinated in olive oil, Dijon mustard, garlic and rosemary. Cooked until juicy and golden, this protein-rich meal pairs perfectly with sweet potato mash and seasonal vegetables for an easy and satisfying dinner.
Ingredients

2 large Lamb Steaks
For the Marinade

2 tbsp olive oil

1 tbs Dijon mustard

2 crushed garlic cloves

1 tsp dried rosemary or 1 tsp fresh leaves, chopped

Pinch of pink Himalayan salt and black pepper
Directions
In a bowl, combine the olive oil, Dijon mustard, garlic, rosemary, salt and pepper until well mixed.
Add the lamb steaks and coat thoroughly in the marinade.
Cover and refrigerate for at least 20 minutes. Remove from the fridge 20 minutes before cooking
Preheat the oven to 180°C or heat a grill pan over a medium-high heat.
Cook the lamb steaks for 7–10 minutes per side, depending on thickness and preferred doneness.
Allow the lamb to rest for 5 minutes before serving with a large helping of steamed vegetables and sweet potato mash.
Recipe Note
Fresh rosemary can be used instead of dried rosemary for a more aromatic flavour.
