Steamed Mediterranean Fish is a healthy, aromatic dish that combines tender white fish fillets with a zesty tomato-based sauce. The fish is steamed to perfection with a squeeze of fresh lemon juice, while the sauce is simmered with capers, olives, garlic, and herbs like oregano and basil for a rich, Mediterranean flavour. Serve the fish with a side of steamed vegetables like Bok Choy for a balanced, nutritious meal that's full of fresh and tangy flavours. Perfect for a light lunch or dinner.
Ingredients

1-2 fillets of white fish (cod, haddock, hake, sea bass are all good options)

1 tin chopped tomatoes

Pink Himalayan Salt

Black pepper

1 clove garlic, crushed

1 tbsp Capers

1 tbsp olives, chopped

Juice of ½ lemon – plus extra juice to squeeze

Dried or fresh oregano and basil
Directions
- In a saucepan combine all ingredients except the fish fillets, mix well and bring to a simmer slowly on a low heat. Allow to simmer gently for 15 minutes as flavours combine.
- Meanwhile prepare the fish to steam; place the fillets on a plate (that can fit inside a steamer basket) and season with a few squeezes of fresh lemon juice and a pinch of salt and pepper.
- Once ready to cook, fill a saucepan (upon which you can stack steamer baskets) with approx. 2-3 inches of water and bring to the boil.
- Place the plated fish inside the steamer basket and then stack the basket on top of the saucepan. Cover with a lid and steam the fish for 7-10 minutes. In a second steamer basket add Bok Choi and steam for the same amount of time.
