2 sliced sticky eggs

½ diced avocado

1 handful spinach

Directions
Add the eggs to a pan of boiling water. Set a timer for 7 minutes to ensure the perfect “sticky” yolk.
Immediately place the eggs in ice water to stop further cooking and prevent a black ring from forming around the yolk. Once cooled peel the eggs and slice.
In a bowl combine the sliced egg with the remaining ingredients and enjoy. Also delicious on toast sprinkled with toasted pine nuts!
