A wholesome festive nibble that’s rich in natural flavour, healthy fats, and crunchy goodness. These aromatic rosemary-infused roasted nuts are lightly coated in olive oil, herbs, and a hint of spice - the perfect partner to mulled wine, cosy evenings, or a festive grazing board.
Ingredients

300 g mixed nuts (almonds, cashews, pecans, walnuts)

1 tbsp Extra Virgin Olive Oil

1 tbsp Honey or maple syrup (optional, for a sweet-salty twist)

1 tsp fresh rosemary, finely chopped (or ½ tsp dried)

½ tsp smoked paprika

¼ tsp cayenne pepper (optional)

½ tsp sea salt

Freshly ground black pepper
Directions
Preheat oven to 180 °C (fan 160 °C).
In a bowl, combine olive oil, honey (if using), rosemary, paprika, cayenne, salt, and pepper.
Add the nuts and toss until evenly coated.
Spread onto a lined baking tray and roast for 10–12 minutes, stirring halfway through, until golden and fragrant.
Cool completely before storing in an airtight jar.
