Juicy vine tomatoes are grilled until their flesh cracks and the juices release, while slices of feta cheese are layered over toasted rye or sourdough bread. The dish is finished with a drizzle of olive oil and seasoned with pink Himalayan salt and black pepper. This easy-to-make toast combines creamy, tangy feta with the natural sweetness of warm, grilled tomatoes for a satisfying and balanced meal.

1 slice of rye bread or sourdough

2 vine tomatoes sliced in half

Feta Cheese (sliced thinly) – enough slices to cover the bread

Olive oil

Pink Himalayan salt

Black pepper
Directions
- Turn on your grill to a medium to high setting. Using foil or baking paper, cover a small baking tray.
- Place the vine tomatoes on the tray so that the intact vine is still on top.
- Grill for 5-7 minutes until the tomato flesh starts to crack and juice runs out. Try not to char grill them!
- In the meantime, half the bread and toast it. Once toast has popped, layer the feta cheese to cover the bread, ready for one tomato to be placed on each half.
- Drizzle with olive oil and season with black pepper and pink salt.
