Rosemary & Mustard Lamb is a deliciously seasoned dish featuring lamb steaks marinated in a blend of olive oil, Dijon mustard, garlic, and rosemary. This simple yet robust marinade infuses the lamb with rich, herby flavours. After marinating, the steaks are oven-cooked and perfect served with a generous side of steamed vegetables and sweet potato mash. With its combination of fragrant rosemary, tangy mustard, and tender lamb, this meal is perfect for a satisfying dinner that’s both elegant and easy to prepare.
Ingredients

2 large Lamb Steaks

2 tbsp olive oil

1 tbs Dijon mustard

2 crushed garlic cloves

1 tsp dried rosemary or 1 tsp fresh leaves, chopped

Pinch of pink Himalayan salt and black pepper
For the Marinade
Directions
- Combine all marinade ingredients in a bowl (big enough to later add the lamb steaks) and mix until well blended.
- Add the whole lamb steaks to the marinade and using your hands, ensure they are both fully covered.
- Cover the bowl and leave for a minimum of 20 minutes for the steaks to absorb the flavours. If leaving them longer than 20 minutes, place in the fridge, but remove 20 minutes before cooking as they cook best from room temperature.
- Pre-heat the oven to 180°C and place the steaks onto a foil covered baking dish.
- Cook the steaks uncovered in the oven for 7-10 minutes each side (depending how well done you like your meat).
Serve with a large helping of steamed vegetables and sweet potato mash.
