'Purpled' Porridge is a warming breakfast combining oats, blueberries, coconut and flaxseed. As the berries soften during cooking they naturally turn the porridge a vibrant purple colour, creating a delicious bowl packed with fibre, texture and fruity flavour. Perfect for busy mornings, this comforting breakfast can also be enhanced with collagen for an optional protein boost.
Ingredients

30g porridge oats

1 tbsp desiccated coconut

1 tbsp ground flaxseed

80g frozen blueberries
-
1 tsp honey or agave nectar

Pinch of Pink Himalayan salt

180-200ml water or milk of choice
Optional Boost
Directions
Add the oats, coconut, salt and water or milk to a saucepan.
Bring to a gentle simmer over a low heat, stirring regularly as the porridge thickens.
Add the blueberries and honey or agave. Continue stirring until the berries soften and the porridge develops its purple colour.
Stir through the ground flaxseed shortly before serving.
If using, stir in one scoop of Lily & Loaf Hydrolysed Collagen+ after removing the pan from the heat.
Serve warm and enjoy immediately.
Recipe Note
Milk creates a creamier porridge than water.
Frozen blueberries work particularly well because they release more juice.
Stir the collagen in after cooking to help maintain a smooth texture.
Top with extra blueberries or coconut for added texture.
