Purpled Porridge is a delicious breakfast, combining porridge oats with desiccated coconut and flaxseeds for added texture and nutrition. As the porridge cooks, frozen blueberries melt into the mix, turning it a rich purple colour while adding a sweet, fruity flavour. Lightly sweetened with agave nectar or honey and seasoned with a pinch of pink Himalayan salt, this warming porridge is both nourishing and satisfying. Ingredients

2 tbsp medium or fine porridge oats

1 tbsp desiccated coconut

1 tbsp of flaxseed or similar mixture

1 handful of frozen blueberries

1 tsp agave nectar/honey

Pink Himalayan salt
Directions
- Add oats, coconut and a pinch of salt to a pan and cover with boiling water.
Bring to a low heat until the mix starts to thicken, stir continuously so it doesn’t stick, while thickening add more water if needed.
Stir in the honey and blueberries until the porridge turns purple.
- Just before serving add the flaxseeds and add water again if needed.
